What are Soft Shell Crabs?
Soft shell crabs are crabs that have recently shed their hard outer shells — a natural process known as molting. Crabs must molt several times over their lifetime as they outgrow their existing shells and must shed them prior to forming their new shells. Immediately after molting, crabs reveal a soft and delicate shell underneath — soft enough to be entirely edible. However, if left alone in the water, the shell will quickly harden after only a few hours. To capture the crabs at their peak tenderness, all of our farms are monitored 24/7. Each crab is carefully harvested the moment it molts — ensuring unmatched freshness, texture, and flavor in every bite.
